How to Make Easy And Light Strawberry Slab Pie

Strawberries have always been my favorite fruit and using them in baking and different desserts is one of my go-to ways to use them, aside from eating them fresh. Every year, as soon as strawberry season arrives, I try to make desserts with them at least once a week. 

This week this recipe caught my eye and I knew I had to make it. This easy strawberry slab pie is a delightful combination of sweet and tart flavors. It’s the perfect dessert to showcase fresh, juicy strawberries when they’re in season, but you can also use frozen strawberries if they’re not available.

For the recipe we’re using ready-made pie crust. We’re gonna roll it out on a baking sheet and bake it until it turns golden brown. While the crust is baking, we’ll be making the filling. In a saucepan we mix together the strawberry jello packet, sugar, cornstarch and pour in the sprite or lemon soda and put it on the stove on medium heat. We’ll keep whisking the mixture as it comes to a boil and thickens. Once it thickens, remove it from the heat and let it cool.

After the crust has cooled down, we’ll place the sliced strawberries on top of it. Then, carefully pour the cooled filling over the strawberries and put it in the refrigerator. One of my favorite things about this recipe is that strawberries aren’t going in the oven and they stay fresh and juicy.
