Strawberries have always been my favorite fruit. Using them in baking and different desserts is one of my go-to ways to use them, aside from eating them fresh. Every year, as soon as strawberry season arrives, I try to make desserts with them at least once a week.
This week this recipe caught my eye and I knew I had to make it. This easy strawberry slab pie is a delightful combination of sweet and tart flavors. It’s the perfect dessert to showcase fresh, juicy strawberries when they’re in season. However, you can also use frozen strawberries if they’re not available.
For the recipe we’re going to use ready-made pie crust. We’re going to roll it out on a baking sheet. Then we put it in the oven until it’s golden brown. While the crust is baking, we’ll be making the filling. In a saucepan we mix together the strawberry jello packet, sugar, cornstarch and pour in the sprite or lemon soda. We put it on the stove on medium heat and we’ll keep whisking until it comes to a boil and thickens. Once it gets thick, remove from the heat and let cool.
Once the crust has cooled down, we’ll put the sliced strawberries on top. Then we’ll carefully pour the cooled filling over the strawberries and put it in the refrigerator. One of my favorite things about this recipe is that the strawberries are not going in the oven. They stay fresh and juicy.
The next time I make this recipe (and I guarantee you will want to make it again too) I plan to do some experimenting with different berries instead. I’ll make it a bit more colorful and a bit more flavourful. This was a delicious and easy, summery treat that would be such a nice treat for a variety of occasions, be it summer picnics, family gatherings, or even just a strawberry craving!
