How To Make Rice Pudding Easter Pie

As a child, my parents would often take me to a diner near our house for dinner. It was your typical old-school diner with your typical diner menu. My Dad would usually order the hot turkey special and always rice pudding for dessert. I’ve had rice pudding many times (though not in years), but I have never tried a rice pudding pie. I stumbled across this recipe just in time for Easter weekend, so I wanted to share it with you all today.

Rice pudding pie is a traditional Italian dessert that’s essentially rice pudding in pie form. The sweet filling is topped with a slightly caramelized custard layer, and the consistency is super creamy. This is a very rich, filling dessert, and would make the perfect addition to any Easter dinner spread.

It may seem odd to have rice included in a dessert recipe, but if you’ve ever tried rice pudding before, you know it just works! Arborio rice is the best type of rice to use for this recipe, and you’ll need to cook it before letting it cool to room temperature. Other than that, you just need seven other simple ingredients to put this recipe together.
