There’s a very particular kind of kitchen disaster that strikes when you think you’ve got all the things to make a cake. You’re halfway to convincing yourself it’s going to solve your entire day. Then you open the fridge and you’re out of eggs. Or milk. Or butter. Maybe all three of ’em. You just stand there for a minute, holding the box of cake mix. It’s like maybe if you stare hard enough, the missing ingredients will materialize. Spoiler: no.

And okay—even if you’re not the forgettable type—maybe you’re trying to bake something for someone that has allergies—egg-less, dairy-less, butter-less, basically joy-less by default, right? Turns out… not necessarily. There’s actually a cake recipe that doesn’t need any of that stuff. No eggs, no milk, no butter. Not even mixing bowls. Which feels fake. But it’s not, not at all.

The original recipe is from Sweet Little Bluebird, who made it for her youngest child, who has an egg allergy. And honestly, that’s reason enough to love it. What kind of child can’t have cake? That’s just wrong. This cake is also sort of a newer version of something that was made back in the Depression. When food shortages were really a thing and you had to get a little crafty with what you did have. It’s definitely old school, but still works.

What makes this even better, in addition to only needing half the ingredients you normally would, is that you mix it right in the baking pan—yes, actually in the pan. No fancy bowls or equipment. You just dump the dry ingredients in, stir a little, pour the wet ingredients on top of the dry, stir a little and put it in the oven. That’s it. So little to clean up, so little drama will take place. If you’ve ever baked something before and immediately dreaded cleaning up the pile of dirty dishes to follow, this cake is already doing you a solid.

And you’ll be glad to know this isn’t some “technically cake” scenario where it looks like dessert, but tastes like cardboard after a work-out. This cake recipe is moist and dense (but in a great way). It’s chocolate-y but without being too sweet. It beats anything from your bake sale; whole-heartedly the real deal. People will eat it and have no idea it is “missing” something. This is likely the highest compliment it can receive.

Also – a heads up, there are a handful of ingredients that may be a bit outside the norm (no spoilers, but if you’re thinking boring, think again). With that said, it combines well, and definitely makes sense when you taste it.

If you’re wishing to give this cake a try – and you should because its great – you can find the full instructions and ingredients over at Sweet Little Bluebird’s site. And while you are already poking around in the world of nostalgia baking, I also have to mention Ding Dong cake recipe which belongs in your bookmarks as well.

Bottom line: if you are out of groceries, dealing with food allergies, or just trying to avoid washing a ton of mixing bowls, this cake is worth keeping in your back pocket. No fuss, no special ingredients, just cake – good old-fashioned, gets- the-job-done cake.
