Each year, I add more and more crockpot recipes to my recipe book. We are an extremely busy family. Between jobs, kids, pets, and extracurricular activities, getting a warm and nutritious meal on the table before it’s dark is often a challenge. That’s why I absolutely adore the crockpot – just dump a bunch of ingredients in, walk away, and come back to a fully cooked meal.

I recently came across another great crockpot recipe that I wanted to share with you all. It’s simple, versatile, and packed full of protein and nutrient-filled veggies. Simply cut up your veggies, add in your sliced steak, toss in a few spices and broth… then set it and forget it!

This recipe is full of flavor but will also fuel you and your family so that you’re not hungry an hour later. Plus, the leftovers will taste even better! I would personally serve this meal over a bed of rice, but I think it would also be amazing with rice noodles. If you’re not feeling the carb, you could also eat it on its own with a simple side salad.

The great thing about this meal is that you can really customize it to your preferences. Not a fan of peppers? Throw in some broccoli instead! Not a big red meat person? Use chicken or turkey!
