Cheesecake is truly one of the best desserts ever invented. It’s light, fluffy, decadent, and basically every other quality that makes up an excellent dessert. Woolworth cheesecake is probably less of a cheesecake, and more of a light, fluffy, lemony icebox cake. It’s lighter than traditional cheesecake, but it’s definitely by no means one of those “healthy desserts.” The lemon flavor makes this recipe slightly refreshing, so I’m deeming this recipe as the perfect summer dessert.
The cheesecake crust is simple (made of graham crackers), but it’s my favorite part of this recipe. This recipe is great because it requires very few ingredients, there’s no need to bake it, and it simply sets in the fridge until you are ready to serve it – or to eat it with a fork standing with the fridge door open.
