Breakfast has always been my favorite meal. Some of my best memories as a child involve waking up on Sunday mornings to my parents having made a giant spread of eggs, bacon, french toast, and fresh orange juice. My love of breakfast foods has carried me into my adult life, and I take every possible excuse to make extravagant breakfasts – holidays, birthdays, you name it! I recently stumbled upon a new breakfast recipe that I can’t wait to try – and naturally, I had to share it with you all!

Southern Living created a recipe for pancake casserole that’s every bit as sweet and buttery as it sounds. The casserole consists of layers of pancakes slathered in a bread pudding-inspired glaze. This recipe is extremely decadent, and would be the perfect thing to make if you’re charged with feeding breakfast to a hungry crowd.

First, you layer a casserole dish with piles of pancakes. Then, you pour the glaze over the pancakes. The key to this recipe is that the casserole dish goes in the fridge overnight, letting the pancakes really soak up every last bit of sweetness. In the morning, all you have to do is pop the dish in the oven for 50 minutes.

This recipe is of course delicious on its own, but it might be even more delectable topped with fresh cream and berries. Or if you’re like me and love savory foods, you could serve the casserole alongside bacon or sausages. The possibilities are endless, and now I’m drooling.
