Ingredients:

  • 1-2 packets of lattice biscuits
  • 600 mL (about 2 1/2 cups) of heavy whipping cream
  • 200 mL (just over 3/4 cup) of Lotus Biscoff spread
  • 100 g (1/2 cup) of instant vanilla pudding mix
  • Optional: 3/4 cup icing sugar and enough milk or cream to dissolve it

Directions:

Step 1: Place one layer of biscuits at the base of desired tray.

Step 2: Place cream in bowl and sprinkle pudding mix over it. Whisk or whip until it thickens (a minute or so).

Step 3: Place Biscoff jar in microwave for about 30 seconds until it melts. Make sure it’s not hot, then pour it over the pudding mixture. Fold both together until well incorporated.

Step 4: Pour Biscoff vanilla pudding over biscuit layer, smooth it out, and finish off with a second layer of biscuits.

Step 5: Dust with icing sugar or glaze and place in the fridge for at least 15 minutes. Enjoy!
