How to Make a Great Dinner for Your Loved One: 3 Meals That Could Blow Their Mind

Great-Dinner

With COVID-19 taking over the world and putting day-to-day routines to a halt with all the quarantines and lockdowns, taking your significant other out to a restaurant for a cute little date is unfortunately no longer an option. But if you can not take your date out for some lavish food, why not bring some lavish food to your date instead? Nothing is more personal and affectionate than making your loved one a nice, warm, and flavorful meal. After all, food comes from the heart and goes to the heart.

If you are planning on making your partner a delicious meal for a dinner date at home, then you have come to the right place. Below, we have listed down our top three meals that are quite a step above one’s usual weeknight dinners, without them being too difficult to make.

2. Yam Enchiladas

Can’t find a delicious vegan option for your climate-conscious partner? Well, then you must be glad we found this simple and easy vegan Enchilada recipe for you to satiate your Mexican food cravings. They are super easy to make, and both the filling and the sauce can be prepped ahead of time as well.

Ingredients:

  • 2 large, or 3 small, sweet potatoes
  • 1 small onion
  • 1 bell pepper
  • 1 jalapeno
  • 2 cups tomato sauce
  • 2 tsp cumin powder
  • 1 tsp red pepper
  • 10 corn tortillas

Method

Peel your sweet potatoes and boil till tender. Water sauté your minced onion and diced bell pepper in a large pan for 5 to 6 minutes, until soft.

While your potatoes are boiling, blend your tomato sauce with 1 tsp cumin, 1 tsp red pepper, and 1 jalapeno. Simmer the sauce on a pan till it is reduced to a thick consistency. Set aside.

Transfer your boiled potatoes as well as sautéed vegetables into a bowl. Mash and mix until they are well incorporated. Add 1 tsp of cumin, along with other spices of choice. Stuff 2 to 3 tbsps. mixture into warm tortillas, or more according to taste, and roll them.

Pour some of your tomato sauce into an oven-safe dish, completely covering the bottom. Place rolled enchiladas and top them with the rest of the sauce. Bake for 20 to 30 minutes in a preheated oven of 350F.

3. How About a Chinese American Classic?

You can always give the old classics a go. Your partner deserves the effort you’ll put in to make cashew chicken as it is deliciously mouth-watering. Though super easy to execute, this flavorful meal is slightly time-consuming in its pre-prep. The cooking part, however, not so much! The Instant Pot makes the whole process much quicker without drying out the juicy and tender chicken.

Is there anything better to make a loved one feel special than feeding them a love-filled meal? You do not have to go overboard, as preparing a home-cooked dinner for two is the perfect way to spice up your plate as well as your love life, without having to leave the house or do anything fancy.
