Potatoes are severely underrated if you ask me. I love every member of the potato family – fries, roasted potatoes, hash browns, mashed potatoes, all of it! Especially when it comes to holiday meals, I’m always on the lookout for new potato-based side dish recipes. The one I’m about to share with you is the perfect appetizer or snack to feed a crowd. I think the name speaks for itself.

The Cooking Jar came up with a recipe for mashed potato puffs that immediately makes me hungry. These savory, bite-sized puffs combine all of your favorite ingredients into one convenient snack. If you have a bunch of leftover mashed potatoes after the holidays (which most of us do), this is a great way to use those leftovers up.

Baked in a muffin tin, these puffs combine mashed potatoes, egg, cheese, bacon, and chives for amazing flavor and texture. Sprinkle some more cheese on top, bake in the oven, and serve warm with sour cream. Is anyone else drooling yet?
