How To Make A Refreshing Pineapple And Coconut Cocktail

source: The Blond Cook
You know that feeling of getting to the end of a busy work week, and relaxing out on the deck with a cool drink? That feeling is one of the many things I look forward to on Fridays. I love a super cold glass of white wine on a hot summer day, but I also love to make fun and tasty cocktails. So on that note, I wanted to share with you the most perfect (and beautiful) cocktail to enjoy this summer!

Jennifer Meyering shared a recipe for a blue coconut cocktail that’s as aesthetically pleasing as it is delicious. Just mix together some vodka, pineapple juice, cream of coconut, blue curacao, and some ice, and you’ll be left with a slushy, refreshing, and brilliant blue cocktail.

No fancy bartending supplies needed for this recipe – all you need is a blender! If you’re serving up this cocktail at a get-together, you can dip the rim of each glass in some coconut cream, followed by some coconut flakes. Paired with the striking blue color of the drink (courtesy of the blue curacao), your guests will think this cocktail is the result of a professional!

So without further ado, click here for the full list of ingredients and step-by-step instructions. My favorite thing about this cocktail recipe is how versatile it is – it would be equally delicious and fitting served at a winter holiday party, or out on the deck in the summer heat. Now I really can’t wait until Friday!
