First of all, use only ripe and fresh tomatoes. There is no need to wash or dry them right away. All you need is a freezer bag or a container. Then you just drop the tomatoes in and freeze them. That’s it. You won’t need any special preparation for this recipe.
Step 2: Freeze
Once you’ve put the tomatoes in the freezer, just leave them there until you’re ready to use them. The freezing causes the water inside to expand. This makes the skin easy to peel off later. This is the best way to prepare them for easy peeling once they are done boiling.
Step 3: Thaw and Peel
When you are through with the freezing process, you can use the tomatoes. To do this, you will have to thaw them. When they are warming up, you will see that the skin begins to become more and more loose. There’s no need for any further action. Simply leave the shanks to rest at room temperature and the skin will come away easily. To speed it up, you can rub the tomato with your fingers. However, it is not very much work.
Step 4: Use the peeled tomatoes
Once the tomatoes are peeled, you can use them in any other recipe that you wish to prepare. I often prepare a large portion of sauce. However, they are perfect for soups, stews, or any dish that requires peeled tomatoes. This does not in any way compromise the taste. You get all the natural, tomatoey taste without the cumbersome task of having to peel them individually.
