To make creamy, slow cooker potato soup, you will need:

2 pounds of Yukon gold potatoes, diced

1 cup of carrots, diced

1 onion, diced

6 cloves of garlic, diced

1 cup of celery, diced

1 tablespoon of fresh thyme, finely chopped

1/2 tablespoon of fresh rosemary, finely chopped

2 tablespoons of flour

1.5 quarts of water or vegetable stock

2 tablespoons of olive oil

1 tablespoon of salt

1/2 teaspoon of pepper

Directions:

Step 1: Chop up all of the vegetables. You can leave the potato cubes a little bigger, but be sure to cut the carrots, celery, and onion into slightly smaller pieces.

Step 2: In a medium-sized bowl, combine the potatoes, flour, salt, and pepper. Stir until the mixture is completely covering all of the potatoes.

Step 3: Combine all of the other ingredients (except the olive oil) in the slow cooker. You want there to be about three inches of liquid above the vegetables, so add in more water if necessary.

Step 4: Put the lid on the slow cooker and set it to cook on low for six to eight hours. The longer you cook the soup, the thicker it will become.

Step 5: When the time is up, add the olive oil to the soup and give everything a stir. Now you’re ready to serve (warm bread is an added bonus!).
